  1. My thoughts on the apparel would be: a smock fitted down below the waist, and another might be an enveloping apron. Both of these garments could be shed quickly, leaving the ordinary dress unstained. Of course, there is also the livery of house servants to identify the noble’s monogram/colors, etc.
